A member of the sunflower family with a crunchy sweet edible tuber reminiscent of jicama, but lighter and sweeter. Absolutely delicious! Tubers must be brought in over winter like potatoes in zones colder than hardiness zone 7. This plant was traditionally grown in the central Andes.
